These Banana Nut Protein Muffins are a delicious, high-protein breakfast that’s perfect for busy mornings. Made with real bananas, hearty oats, and a boost of protein, they’re soft, moist, and packed with flavor!


Ingredients

• 1 cup oat flour (or blended oats)

• 1 scoop vanilla protein powder

• 1 tsp baking powder

• ½ tsp cinnamon

• ½ cup mashed ripe banana (about 1 medium banana)

• 2 large egg whites

• ¼ cup unsweetened almond milk

• ½ tsp vanilla extract

• 1 tbsp sugar-free maple syrup (optional)

• ¼ cup chopped walnuts


Instructions

1. Preheat the Oven:Set to 350°Fand line a muffin tin with silicone baking cups.

2. Mix Dry Ingredients:In a bowl, whisk together oat flour, protein powder, baking powder, and cinnamon.

3. Add Wet Ingredients:Stir in mashed banana, egg whites, almond milk, vanilla extract, and maple syrupuntil smooth.

4. Fold in Walnuts:Gently mix in the chopped walnuts.

5. Bake:Pour batter into muffin cups and bake for 18-20 minutes, or until a toothpick comes out clean.
