Ingredients


For the Meatballs:

• 1.5 lbs lean ground turkey

• ¼ cup grated Parmesan cheese

• 1 large egg

• ¼ cup almond flour

• 2 cloves garlic, minced

For the Sauce & Zucchini Noodles:

• 2 tbsp olive oil

• 2 cloves garlic, minced

• ¼ cup unsweetened almond milk

• ¼ cup grated Parmesan cheese

• 3 medium zucchinis, spiralized

• ½ tsp red pepper flakes (optional)

• 1 tbsp fresh parsley, chopped (for garnish)


Instructions

1. Prepare the Meatballs:In a large bowl, mix together ground turkey, Parmesan cheese, egg, almond flour, minced garlic, salt, pepper, and Italian seasoning.Roll into 1-inch meatballs.

2. Cook the Meatballs:Heat 1 tbsp olive oilin a large skillet over medium heat. Add meatballs and cook for 4-5 minutes per side, until browned and cooked through. Remove from the skillet.

3. Make the Garlic Parmesan Sauce:In the same skillet, heat 1 tbsp olive oilover low heat. Add minced garlicand cook for 1 minute. Stir in almond milk and Parmesan cheese, simmering for 2-3 minutesuntil slightly thickened.

4. Prepare the Zucchini Noodles:In a separate pan, sauté zucchini noodlesfor 2 minutesuntil slightly softened.

5. Combine & Serve:Return meatballs to the skillet, coat with sauce, and serve over zucchini noodles. Garnish with fresh parsley and red pepper flakes (if using).
